Simple Recipe of Mathri

Mathri is a snack biscuit from north west region of India.


Mathri is served with mango, chilly or lemon pickle along with tea. It is also served at marriages and poojaas and various occasions. Marsala Mathri is a variant of Mathri with spices added to make it more crispy.
This easy Mathri recipe is a Rajasthani Flaky biscuit can be enjoyed in travelling and can be  preserved for a month easily. It is an Indian snack which  is prepared in various ways.
Generally it is prepared with flour, water and carom seeds.

Course:
 Breakfast snack.
Cuisine: 
Indian cuisine, Rajasthani cuisine

Ingredients:
 2 cups all purpose flour 
 1 cup wheat flour (optional)
 1 tsp red chilly powder
 Green chilly as per taste
 1 tsp garlic paste
 2 tsp ghee/oil for mixing
 1 tsp Dry Mint Leaves (Pudina-optional)
 Salt to taste
 1-2 cups warm water to knead the dough

Method: 

  • Take a deep mixing hollow bowl for combining the ingredients. 
  • Put chilly powder, green chilly, garlic paste (lahsun) and salt as per  the taste in it.
  • knead the dough with warm water for soften up and keep steering for few mins keep aside for 15-20 minutes, till it sets well.
  • On the other side take a pan with oil or ghee in it, let it get heat for mins.
  • Then Divide it into small balls and flatten them between your palms with help of oil so  that it doesn't stick on your palm and helps u to give a shape as per your choice.
  • Make various shapes of your choice  from dough and dip it into hot oil. 
  • Fry it on average heat on both the sides well till it catches a golden brown colour.
  • Drain on oil absorbent paper and serve hot with your morning or evening tea / coffee or pickle .
  • you can also preserve them by cooling it and placing it in an air tight container.

Recipe - Make Flaky,crispy,spicy,fried Kachoris in just 8 easy steps !

Kachori, a word that conjures lot of lovely memories spent during college days.

Khasta Kachori is a delicious, spicy, fried puff , great as an appetizer or as part of a festive meal for any occasion.

Here is how to make this Flaky & crispy Kachori’s is just 8 easy steps :)
Ingredients:

  • 1 cup maida (all-purpose flour)
  • 1 tbsp rice flour
  • 2 tbsps oil
  • enough cold water to knead the maida
  • salt to taste
  • oil for deep frying
8 Easy Steps

  1. Mix one cup of white flour (all purpose or plain flour), 1 tablespoon of rice flour, 2 tablespoons of oil and salt. Make a dough. Knead the dough well, using cold water.
  2. Divide the dough into small balls. Keep them covered with moist cloth for 20 – 25 minutes.
  3. While the dough is resting, soak ¼ cup of mung bean and ¼ cup of black gram for 3 hours. Drain the water and allow it to dry.
  4. Add the oil to a frying pan. Add crushed cumin seeds and asafoetida. Wait until it turns brown. Now add the ginger and green chilli paste, gram flour and spice powders of your choice. Sauté them for a minute or two.
  5. At this stage, the fillings for the kachori are ready. Place the fillings on a plate.
  6. Take out the balls (of flour). Roll the balls using a rolling pin and roll into a thick poori. Add the kachori fillings in the center. Enclose the kachori fillings with the outer part of the poori to make a pocket. Make the same with the other balls.
  7. Add oil to the frying pan and heat on medium flame for frying the kachoris.Add the kachoris to the oil and fry them until they're properly cooked and their colour turns to golden–brown.
  8. Transfer the Khasta Kachori onto a plate. They're now ready to serve!

FAFDA - Crunchy & Munchy Gujarati Snack !

Smell of the freshly wet mud, the oil lamps & candles, the heavy winds, the lush greenery, the newness 
Aur garama garam Chai Fafda & Mirchi !!!!!!

Brings out a wave of Nostalgia , isn’t it ?

Let's try this hot and delicious Fafda Recipe in cloudy atmosphere !!


Makes: 3 to 4 servings 

Ingredients :-

  • 1 cup besan/ gram flour
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon ajwain
  • 1/4 teaspoon pepper, finely ground
  • 1 tablespoon oil
  •  Salt to taste
  • 1 cup water, or as required
  • A pinch of asafoetida/ hing

Method:- 

  •   Begin by pouring all the dry ingredients together in a large bowl.
  •  Now add water gradually to the bowl and mix the ingredients well, till everything gets knead into soft dough.
  • Once the dough has been prepared, it still might be sticky. Therefore add oil to it and knead it again for 2-3 minutes more.
  • Once done, divide the dough into 12-15 equal sized portions and make them into small balls.
  • Roll each of these balls into long and thin strips. Ensure that the rolling is done at a stretch to avoid the dough breaking up or sticking to the rolling pin.
  • Now heat the oil in large deep frying pan and slip each of the long dough strips carefully into the pan.
  • Deep-fry the fafda dough strips on low flame for 1-2 minutes, turning them till they are browned on both sides. Remove them from the oil once done and serve the fafdas hot.
  • Serve the Gujarati Fafda along with Gujarati Kadhi and Papaya Salad.
