MM Mithaiwala- Holi Special - Mawa Gujia recipe


Mawa Gujia

Ingredients:





2 1/2cup refined flour (maida)
250 gm thickened milk (mawa)
1 cup sugar
1/2 tsp cardamom powder (elaichi)
10-12 almond (badam)
10-12 raisins (kishmish)
clarified butter (ghee) for frying


Method :

  • Fry thickened milk in a pan until it turns light brown and then remove it from the flame.
  • Grind sugar to a powder.
  • Finely chop almonds.
  • Mix sugar, almonds, raisins, cardamom powder and thickened milk.
  • Keep in mind that sugar is to be added only when thickened milk gets cooled.
  • Add 5 tbsp ghee in thickened milk and knead into hard dough with water.
  • Make small rounds of it and roll them into small chapattis.
  • Take 1 tbsp thickened milk and spread on the chapattis.
  • Put some water on the corners so as to seal them and then press them with your fingers.
  • Now heat ghee in a pan and deep fry all gujhiyas at low flame from both the sides.
  • Take them out and store the mawa gujiyas.

MM Mithaiwala - Holi Special - Dahi Vada recipe






Ingredients: :


For Wada:
1 Cup Urad daal
Salt to taste
Oil to fry

For Dahi :
1 kg Dahi (yogurt)
1/2 tsp grated Ginger
Finely chopped coriander leaves
1-2 green chilies chopped
Salt to taste
2 tsp Roasted cumin(jeera)powder
Red chili powder to taste



Method:

  • For Vada - Clean, wash and soak the daal overnight.
  • Grind it into smooth paste.
  • Add salt to taste.
  • Heat oil in a pan and drop a spoonfuls of batter and fry till golden brown.
  • Take the hot vadas and put in cold water for 2-3 minutes.
  • Now Take them out of water and squeeze the water and keep aside.
  • For Dahi - Blend the curd (yogurt) and little water until it is smooth.
  • Keep in refrigerator for an hour to get chilled.
  • Add salt, red chili powder and cumin powder.
  • Serving - In a deep dish arrange wada and pour dahi over them.
  • Now add imli (tamarind) chutney and green chutney.
  • Garnish with coriander.
  • Serve the dahi vadas chilled.
MM Tip

In case the vada batter is sticky or watery, add a tblsp of rice flour and try refrigerating the batter for an hour.

MM Mithaiwala - Mango lassi recipe



Ingredients:
1 cup yogurt
2 cups ripe mangoes peeled and chopped
1/2 cup milk
1/8 teaspoon cardamom powder
3 tablespoons sugar (Adjust to taste)
3 cups crushed ice or ice cubes, use as needed

Method:
  • Blend the mangoes, yogurt, milk and 2 tablespoons of sugar. Adjust sugar according to taste. Sugar amount will depend on the sweetness or sourness of the mango and yogurt
  • Add ice and cardamom powder and blend again. Add water to adjust consistency to your liking as the best Lassi is slush-like.
  • Pour in tall glass and 
Tips:

 Garnish with mint leaf, chopped - Almonds, Pistachio, Kesar

MM Mithaiwala - Custard Apple Lassi recipe





When you hear the word Lassi .. what comes in your mind.? Plain Sweet Lassi, Strawberry lassi, Chocolate Lassi or all sabka favorite yummy Mango Lassi?..  but have you ever thought of pairing the curd / yogurt with luscious custard apple flesh and cardamom ?

Creamy and sweet Custard Apple Lassi is just perfect for breakfast or a dessert .
INGREDIENTS:

1 cup custard apple flesh, frozen
1 cup natural yoghurt
1/2 tsp cardamom or more/less to taste
Chopped pistachios plus extra cardamom, to garnish


METHOD:

Place all ingredients except pistachios into a blender. Blend. Pour into glasses.
Garnish with chopped pistachios and extra cardamom.

To freeze custard apple, spread the flesh out on a tray lined with baking paper. It is easy to cut into wedges and store in a freezer bag.

You can also freeze it in ice cube trays.

MM Mithaiwala - Chocolate Lassi recipe




Ingredients
  • 200 gms chilled thick yogurt / curd
  • 100 gms dark chocolate chunks
  • 2 tbsp cocoa powder
  • 2 tbsp water
  • 2 tbsp caster sugar or brown sugar
  • 8 to 9 toasted or roasted almonds sliced into juliennes 
  • 4 tbsp nutella at room temperature
  • a pinch of salt
  • few ice cubes (optional)


Method
  • Combine chocolate, nutella and cocoa  into a microwave bowl with 2 tbsp water.
  • Microwave on high power for 60 secs Or until melted. 
  • Allow the chocolate to come to room temperature.
  • Now mix melted chocolate, some toasted almonds, chilled yogurt / curd, caster sugar and some ice cubes if using. 
  • Grind them into a processor until they all mix evenly. 
  • Serve chilled.

  • Decorate on top with reserved toasted almond juliennes.

MM Mithaiwala - Plain Sweet Lassi recipe






Ingredients 
  • 1 green cardamom pod
  •  100 ml natural unsweetened yoghurt
  • 1 ½ tsp caster or demerara sugar
  • 1 tsp rose water
  • 200 ml cold water
  •  4 mint leaves

Method
  • Use the back of a spoon to gently crush a green cardamom pod, until it splits. 
  • Remove the seeds with your fingers, and throw away the outer case.
  • Put the cardamom seeds into a mixing bowl or jug, along with 100ml of unsweetened natural yoghurt, 1 1/2 teaspoons of caster or demerara sugar, 1 teaspoon of rose water and 200ml of cold water.

  • Use a hand blender to blend the mixture into a smooth paste.Pour into glasses. Garnish with a sprig of mint.

Top with malai and serve chilled.

MM Mithaiwala - Strawberry Lassi recipe





Ingredients

  • Strawberries(chopped) 400 g
  • Yogurt(low fat) 300 ml
  • Golden caster sugar 30 g
  • Ice cold water 750 ml
  • Rosewater a few drops
  • Black pepper(ground) to serve 
Method

  1. Place the strawberries in a food processor with half the iced water. Blend until smooth.
  2. Add the yogurt, sugar, remaining water and the rosewater and blitz until smooth and frothy.
  3. Pour into chilled, tall glasses, sprinkle with black pepper and serve immediately.
MM Tip -

Serve it cold with chopped strawberries on the top

MM Mithaiwala - Watermelon Juice Recipe




 

Ingredients

Watermelon - 1 cup chopped roughly and chilled
Sugar / Honey - 1 tsp
Lemon juice - 1 tbsp
Salt - a pinch


Method
1.Cut the watermelon, dessed it. Take out the red pulpy layer and chop it roughly into pieces. Discard the outer white lay

2.In a mixer add sugar and lemon juice and blend it along with watermelon. Refrigerate for a while and serve chilled. Do not add water as watermelon itself has water content in it.Best when served chilled.Enjoy the easy yummy summer drink.

Have the juice fresh, after blending do not let it sit for more time the freshness and taste will not be good.

Mahashivratri Special - Sabudana Kheer - Sago Pudding

Time : Ready in 35 mins

Recipe will serve 4

Ingredients

1/3 cup tapioca (sabudana, sago)
3 cups milk
3 tablespoons sugar
1 tablespoon sliced pistachios
Few strands of saffron
1/4 teaspoon cardamom powder

Method

  • Wash and soak the tapioca in about 1/3 cups of water for at least two hour, Sabudana will soak up most of the water and become light and fluffy.

  • Boil the milk in heavy bottom pan after milk comes to boil let it boil for about another 8 to 10 minutes making sure stirring occasionally so milk does not burn in bottom of the pan.

  • Add the tapioca cook until tapioca is soft and has become translucent this should take about 4 minutes.

  • Next add sugar, cardamom, pistachios, and saffron and boil for 2 to 3 minutes. Turn off the heat. As kheer will cool become little thicker in consistency.
Kheer can be served chilled or warm.
