Kaju Barfi Recipe - M.M.Mithaiwala
Kaju barfi or Kaju Katri is an Indian subcontinent dessert. It is enjoyed by everyone during festivals.
Ingridients :
400 gms Sugar
1 tbsp Rose water
500 gms Cashewnuts (kaju)
A pinch of Saffron (kesar) strands
Little milk
Silver foil
Preparation :
- Soak the cashewnuts in 1 litre of water for 2 to 4 hours.
- Drain and grind them into a paste in a grinder.
- Add
the sugar and cook the mixture on a slow flame until of dough-like
consistency. Add the rose water if the mixture is too hard.
- Warm the saffron in a small vessel, add a little milk and rub until the saffron dissolves.
- Cool the dough mixture slightly and add the saffron mixture. Mix very well.
- Spread the mixture evenly on a smooth surface.
- Spread the silver foil over it.
- Cut into diamond shaped pieces and serve.

Shahi Tukda Recipe - Eid Special
Shahi Tukda is a rich dessert and it lives up to its name. Crisp bread dipped in rabdi & garnished with dry fruits are heavenly.
Ingredients :
- 1lt Milk
- 20grams Sugar
- Saffron few starnds
- 12 Bread Slice
- 300grams Ghee for frying
- Cardamom powder
Preparation :
- Prepare the sugar syrup and keep aside.
- Boil milk and simmer till it is a thick rabdi.
- Add cardamom powder and sugar to it.
- Cut the bread slices into triangles.
- Heat ghee and fry the bread.
- Soak the bread in sugar syrup.
- Remove and arrange them on a platter and pour the thick rabdi on it.
- Garnish with saffron strands and dryfruits.
