Shahi Tukda Recipe - Eid Special



Shahi Tukda is a rich dessert and it lives up to its name. Crisp bread dipped in rabdi & garnished with dry fruits are heavenly.


Ingredients :
  • 1lt Milk
  • 20grams Sugar
  • Saffron few starnds
  • 12 Bread Slice
  • 300grams Ghee for frying
  • Cardamom powder

Preparation :  
  1. Prepare the sugar syrup and keep aside.
  2. Boil milk and simmer till it is a thick rabdi.
  3. Add cardamom powder and sugar to it.
  4. Cut the bread slices into triangles.
  5. Heat ghee and fry the bread.
  6. Soak the bread in sugar syrup.
  7. Remove and arrange them on a platter and pour the thick rabdi on it.
  8. Garnish with saffron strands and dryfruits.

Why Lord Ganesha loves to eat Modak .


 


A Modak is a sweet dumpling popular in Western, eastern and Southern India. It is called modak (मोदक) in Marathi. The sweet filling inside a modak is made up of fresh grated coconut and jaggery, while the soft shell is made from rice flour, or wheat flour mixed with khava or maida flour. The dumpling can be fried or steamed. The steamed version, called ukdiche modak, is eaten hot with ghee. Modaks have a special importance in the worship of the Hindu god Ganesh;modak is believed to be his favorite food, which begets him the moniker modakapriya (the one who likes modak) in Sanskrit. During the Ganesh worship ceremony, known in India as Ganesha Chaturthi the puja always concludes with an offering of twenty-one modaks to the deity and as prasad.
 

MODAK - LORD GANESHA'S FAVOURITE :
 
There is an interesting story in the Padma Purana regarding why Ganesha loves Modak. Once the Devas (demi gods) came to visit Shiva and Goddess Parvati and presented them a divine Modak. It was a very special Modak and the person who ate the modak will become knowledgeable in all scriptures, science, art and writing. Goddess Parvati wanted to present it to her sons – Lord Ganesha and Lord Kartik. But the brothers were not ready to share it.So a confused Goddess Parvati said that who among you proves the true meaning of sincerity and devotion will get the Modak.To prove the true meaning of devotion, Lord Kartik immediately mounted on his Vahana, or vehicle, and started visiting all the spiritual places.But Lord Ganesha went around Lord Shiva and Goddess Parvati and said that no amount of offerings or fasting or visiting sacred places is equal to the devotion of one’s father and mother.Impressed by Lord Ganesha’s explanation of true meaning of sincerity
and devotion, Goddess Parvati gave the Modak to Lord Ganesha. This is believed to be the reason for Lord Ganesha’s love for Modak.

Rava Kheer - Recipe





Ingredients:

Sugar - 4 tbsp
Handful of cashewnuts
Ghee - 2 1/2 tsp
Milk - 4 Cups 
Cardamon Powder as per taste


Preparation :
  • Heat ghee is an aluminuim vessel, on heating add cashewnuts and roast till gloden brown and remove them from vessel.
  • Add Rava to the vessel on low flame without letting it change its colour.
  • Add Milk and keep stiring to avoid lumps.
  • Add Sugar and mix well. 
  • Cook it for 2-3 minuts on low flame itself and turn off the gas.
  • Pour it in a bowl and add fried cashewnuts and cardamom powder.

मालपुआ रेसिपी

 

मालपुआ
 मालपुआ उत्तर भारत में बनायी जाने वाली स्वादिष्ट और बहुत आसान रैसिपी है. मालपुआ को खीरपूआ भी कहा जाता है, राजस्थान में मालपुआ में मावा मिलाकर मावा मालपुआ (Mawa Malpua) भी बनाते हैं. 

आवश्यक सामग्री :

चीनी - 1/4 कप ( 40- 50 ग्राम)

दूध - 1/4 कप (50 ग्राम)

गेहूं का आटा - 1कप (125 ग्राम) 

देशी घी - तलने के लिये

विधि : 

चीनी को किसी प्याले में डाल लीजिये और दूध डालकर चीनी घुलने तक घोलिये. दूध और चीनी के घोल में आटे को डालिये और गुठलियां खतम होने तक घोल लीजिये, अब इतना पानी डालिये कि घोल पकोड़े के घोल के जैसा गाढ़ा हो जाय.  घोल को अच्छी तरह 4-5 मिनिट तक मिक्स करते हुये फैट लीजिये, घोल को एकदम चिकना होने तक फैटिये.

चौड़े तले की कढ़ाई जो कम गहरी हो, घी डाल कर गरम कीजिये. अब चमचे में घोल भर कर कढ़ाई में गोल गोल फैला कर डालिये. धीमी और मीडियम आग पर माल पुये सेकिये. हल्के गुलाबी होने पर मालपूआ निकाल कर प्लेट मे रखिये. कढाई के साइज के हिसाब से एक बार में एक मालपूआ ही सेका जा सकता है,. इतने घोल में करीब 8-10 माल पुये बन जायेंगे. सारे मालपूये इसी तरह तैयार कर लीजिये.

मालपुये (Malpua) तैयार है. इन्हैं गरमा गरम या ठंडे कैसे भी खीर या हरी धनिये की चटनी, टमाटर की चटनी या खट्टा नीबू के अचार के साथ परोसिये और खाइये.
