Rice Kheer Recipe - M.M.Mithaiwala



A rich and creamy dessert - Rice Kheer
Ingredients:
Basmati rice 50 grams 
Ghee - 2 tablespoon
Sugar 3-4 tablespoon
Milk - 1 litre
 
Cardamom
 
Almond and cashew nut

Method:
1. Wash and soak rice for 1/2 hour.
2. Drain it and keep the rice aside for sometime till it is completely dried.
3. Heat ghee in a pan. Add the rice and fry till light brown.
4. Add milk to the rice and keep stirring till the mixture thickens or reduces to 1/3rd of the orginal quantity.
5. Add sugar and mix well by partially crushing the rice.
6. Basmati kheer is very creamy and has a delightful aroma, especially when seasoned with grounded cardamom, thinly sliced almond and cashew nut. 
8. Keep in the fridge and serve chilled. It can also be served hot.

Khajur Ladoos Recipe - M.M.Mithaiwala


Are you health conscious and craving for sweet?? 
  Here is a wonderfully sweet, dates ladoos which are rich in dietary fiber can also control your sweet-tooth!!
 
Ingredient:
Dates - 1 cup
Butter - 2 tablespoons
Almond - 2 tablespoons
Cashew - 2 tablespoons
pistachio - 2 tablespoons


Method:
·        Wash the dates and dry them, remove the seed and chop the dates into small pieces or you can grind it.
·        Roast the nuts till it turns brown and  chop them into small pieces.
·        Heat the butter or ghee in a non-stick pan.
·        Add the dates and cook on low flame until it turns soft - about 3 mins. It will absorb the butter/ghee completely too.
·        Now add some chopped nut into the pan mix it well with the dates.
·        The mixture will be sticky and a bit tough to blend, but keep going with your spatula and soon you will have a mass of dates and nuts blended in perfectly.
·        When it's cool make ladoos of your desired size and ready to serve

Bengali Dessert Rasmalai Recipe - M.M.Mithaiwala


 


Rasmalai is a Bengali dessert consisting of soft paneer balls immersed in chilled creamy milk and It also has been described as "a rich cheesecake without a crust."

Ingredients:

Full Fat Milk - 1 liter
Rasgulla - 10-15
Sugar - 1 1/4 cup or adjust
Saffron - 1 pinch
Nuts - 1/2 cup chopped (Almonds, Cashews & Pista)
Ghee - 1 tsp

Method:

Heat the milk in a deep and wide vessel and bring it to a boil Once it has reduced, add  in sugar and boil till it is little thick.
Soak saffron in some warm milk for 5 mins, then Fry some nuts in a tsp of ghee till it    turns golden brown
Now add in saffron milk, fried nuts and raw pista in thick creamy milk and mix it well.
Add in rasgullas and simmer it for 5 mins.
Once it is done. Transfer it to a bowl and chill it for 5 to 6 hours.
Serve chilled with extra sprinkling of nuts.

COCONUT BARFI RECIPE - M.M.Mithaiwala


Simple & Sweet in 30 min Ready to Eat!!


Ingredients:
       
       225 gms Khoya
       225 gms coconut (dry and ground)
       1 tsp cardamom seeds (ground)
       1 tbsp ghee
       2 1/2 cups sugar
       2 cups water
       1/2 tsp almonds (grated)
       1/2 tsp pistachios (grated)


How to make coconut burfi:
  • Mix khoya and coconut and fry them lightly with ghee on a low heat.
  • Add cardamom and mix well.
  • Prepare one-string syrup by dissolving sugar in the water.
  • Now stir the coconut mixture into the syrup.
  • Grease the plate and spread the grated nuts on it.
  • Spread the prepared evenly over the plate and allow it to cool.
  • Now with the knife, cut it into desired shapes.
  • Turn them over so that nuts covered part appears on the top.
  • Nariyal ki burfi is ready to be served. 

     Healthy and Nutritious can be Delicious!!!
