Rice Kheer Recipe - M.M.Mithaiwala



A rich and creamy dessert - Rice Kheer
Ingredients:
Basmati rice 50 grams 
Ghee - 2 tablespoon
Sugar 3-4 tablespoon
Milk - 1 litre
 
Cardamom
 
Almond and cashew nut

Method:
1. Wash and soak rice for 1/2 hour.
2. Drain it and keep the rice aside for sometime till it is completely dried.
3. Heat ghee in a pan. Add the rice and fry till light brown.
4. Add milk to the rice and keep stirring till the mixture thickens or reduces to 1/3rd of the orginal quantity.
5. Add sugar and mix well by partially crushing the rice.
6. Basmati kheer is very creamy and has a delightful aroma, especially when seasoned with grounded cardamom, thinly sliced almond and cashew nut. 
8. Keep in the fridge and serve chilled. It can also be served hot.

Basundi Recipe - M.M.Mithaiwala


          
 Rich, creamy, thickened milk, flavored with saffron & nuts. A gem among Indian sweets.


Ingredients

·       500 ml full cream milk
·       Sugar as much you require
·       few strands of saffron
·       1 tbsp milk powder
·       ¼ t/s cardamom powder
·       8 - 10 pistachios chopped finely
·       15 - 16 almond flakes Or chopped finely
·       few raisins (optional)
·       a pinch of salt

   Method

1.   Boil milk on a wide bottomed saucepan. Once milk reaches it's boiling point add sugar.
2.   Stir nicely and place on low heat add milk powder. Simmer until milk reduces to half and thickens.
3.   Scrape the sides properly as this will make your basundi more creamy.
4.   Add chopped nuts, cardamom powder and salt.
5.   Check the taste add sugar if required. Finally add raisins. Switch off the gas pour over  the serving vessel.
6.   Once it gets chilled it will thicken further.

The summer season is almost here and it is time to change food. Eating very heavy meals can make you feel uneasy, tired, sluggish and lead to problems like indigestion as well. Eating seasonal food is important to keep us in good health. Though all food have their own set of benefits, there are some which you shouldn’t miss out especially during summers.
 
Cucumber - Cucumbers are your best bet in summers as they are 96 percent water and eaten in raw green state. They contain vitamin C and silica which are known for tissue growth and skin cleansing properties. Their high water content makes them ideal for summers. It is important to eat cucumbers with the skin because their outer skin is rich in potassium, magnesium and fibre which has tremendous health benefits for the body. 

Brinjal - Brinjal is a common purple vegetable containing lots of dietary fibre and antioxidants. It is an excellent source of molybdenum, potassium, vitamin K, magnesium, copper, vitamin C, vitamin B6, folate, and niacin.
