Gudipadwa Special Mango Shrikhand Recipe - MMMithaiwala


Mausam hai kabhi garam toh kabhi thand, Gudipadwa ke offer hogaye shuru lena maat bhulna MM's se shrikhand!!
 


Ingredients  
Yogurt - 3 cups (should not be sour) 
Powdered sugar - 1/4 -1/2 cup or as required 
Pistachio -2 tbsp 
Almonds - 4 
Cardamom powder - 1/4 tsp 
Saffron -10 strands 
Warm milk -1 tbsp 
Mango Puree - 1 cup (Mango should be sweet) 
Few mango bits
Pistachio and almonds


Preparation
Place yogurt in a muslin cloth and hang it overnight or for 6-7 hours to drain out the whey from the yogurt.
Tie it and place it inside the refrigerator otherwise the yogurt will become sour.
Soak pistachio and almonds in hot water for 10 minutes. Remove the skin and chop it into small pieces.
Soak saffron in warm milk.

Method
Using a spatula, mix the hung yogurt with powdered sugar nicely for 5-6 minutes or until the sugar dissolves.

Now add the saffron soaked in milk, half of the chopped pistachio and almonds, mango puree, cardamom powder and mix well.

Keep it in the fridge for an hour. Garnish with chopped pistachio, almonds and mango pieces. This dessert should be served chilled.

Instant Dry-Fruit Ladoo



MM Mithaiwala - Dry Fruit Ladoo 

As the weather demands MM Present Easy and Instant traditional and humble dry fruits and nuts ladoo recipe , which is an all time treat for kids too ;) 

Ingredients :- 

Dates - 15
Figs - 5
Raisins - around 20
Badam - 25 whole
Cashews- 10 broken roughly
Pista - 20 whole
Mixed Nuts - 1.5 tbsp chopped
Melted Ghee - 1 tsp
Cardamom powder - 1/8 tsp

Method :- 
  1.  Pulse cashews, pistachios, almonds, hazelnuts coarsely. do not powder
  2. Chop dates to small chunks.
  3. Heat  a heavy bottom pan with ghee, roast the nuts on a low flame
  4. Add seeds and coconut fry for 2 to 3 mins
  5. Add dates and cardamom powder. Fry till you get a nice aroma of coconut. Set it aside. Add sugar to it.
  6. Grate jiggery, add water to jaggery and melt it on a low flame
  7. Filter it and discard the debris & Add ghee to it.
  8. Boil this jaggery syrup till you get a soft ball consistency. To check drop little syrup in a small bowl of water. You must be able to roll and get a soft ball & Add rock sugar to the nuts
  9. Add this jaggery syrup to the nuts and mix well. Begin to cook again on a low flame, stirring constantly to prevent burning. Cook till you see jaggery strings in the mix.
  10. Mix well.Now shape them into small lemon sized ladoos.Arrange them in liners and store it.
